Crockpot Sweet Garlic Chicken
Saw this recipe on Facebook - posting here so I can Pin it! This recipe is so good - tastes kind of like sesame chicken!
Ingredients:
4-6 chicken breasts
1 cup packed brown sugar
2/3 cup vinegar (I used apple cider vinegar)
1/4 cup lemon-lime soda (diet or regular)
2-3 Tablespoons minced garlic
2 Tablespoons soy sauce
1 teaspoon fresh ground pepper
2 Tablespoons corn starch
2 Tablespoons water
Red pepper flakes (optional)
Directions: Spray slow cooker with non-stick cooking spray. Place chicken (frozen, thawed or fresh) inside slow cooker. Mix together brown sugar, vinegar, soda, garlic, soy sauce, and pepper together. Pour over chicken. Cook on low for 6-8 hours or high for 4 hours. Take chicken pieces out of slow cooker (mine basically fell apart) and pour remaining sauce into saucepan. Place saucepan over high heat. Mix together corn starch and water, pour into saucepan, and mix well. Let sauce come to a boil and boil for 2-3 minutes, or until it starts to thicken and turns into a glaze. Remove from heat and let sit for a minute or two (it will continue to thicken as it cools down). Sprinkle red pepper flakes on top if desired. This can be served over rice or noodles, I also like it with a baked potato on the side (It's good on top of the potato too!)

Made this for dinner tonight and it is delicious. Super easy and I substituted the turkey I had from my husband's hunt earlier this year. A great way to use it up! I will make again! Thanks!

Do you put the cooked chicken in the saucepan or are you just making the glaze at that point?

I have made this twice now. I always pan sear my chicken before putting it in the slow cooker to avoid the white aspic like stuff. I also added the cornstarch to the initial liquid and it has thickened up beautifully both times. No need to dirty up a sauce pan to get the sauce to thicken! Set it and forget it!
I'm always hesitant about using the slow cooker - many times food comes out bland and the sauce is salty at best for any flavor.
This recipe was wonderful - the flavor was good - not too much salt (I did forget to add soy sauce till about 1/2 way through the process)
Per someone else's comment - I just mixed the water and corn starch in a bowl and added to the crockpot with one hour to go and the chicken had been shredded.
I'll be making this again.
